Consultant/Project Manager
Engaged by a family run business with 32 Employees and £2m turnover manufacturing frozen for "bake off" and fresh baked premium pasties and pies, including own butchery for meat supply. Responsible for advising upon all operational and technical aspects in a strategic and hands on project. role of turning the small family business into a national Franchise operation.

Key Achievements:

  • Developed franchise system (each franchise costs £100k) to include all financial, legal and marketing aspects.
  • Interviewed all potential franchisees and co-ordinated team to find and develop franchise outlets.
  • Developed all business plans for franchise outlets.
  • Developed and tendered for EPOS IT system for all franchise outlets.
  • Developed logistics solution to ensure delivery of all products across the UK from Cornwall on a "day 1 order for day 2 delivery" basis.
  • Negotiated overall business package for all additional sales "add-ons" across the franchise outlets.
  • Revised all costings and reduced raw material costs, improve operations in production to maximise margins.
  • Upgraded factory and team (including all recruitment and training) to meet increase in sales demand due to launch and growth of franchise outlets.

Interim Technical Manager & Business consultant.
Engaged by a company with c80 employees and a turnover of £3m who manufacture crepes, pancakes and blinis. chilled and frozen for retail and service sector. Customers include M&S, Waitrose, Sainsburys, 3663, Brakes and numerous wholesalers.

Key Achievements:

  • Managed project to develop blinis for launch into retailers. Responsible for all technical and operational aspects of NPD leading to successful launch, including site approval by M&S and Waitrose. Turnover doubled in first year of launch.
  • Managed site approval by M&S, following Hygiene audits and PPC audit, including all COP compliance, Ethical Audit and SEDEX.
  • Managed NPD associated with low carb range of wraps, launched through Heinz into M&S. Later launched into Boots under Atkins brand.
  • Reinstated lost BRC accreditation and maintained over several years.
  • Managed operational, technical and engineering aspects for transition from manufacturer of frozen food for wholesale sector to short shelf life chilled producer for retailers, including scale up of production and purchase and installation of Multivac tray former and sealer (MAP) including in line check-weigher/metal detector combi to M&S spec.
  • Managed recruitment of Operations Manager and Technical Manager.

Associate Auditor - Moody International
Retained by Moody International to carry out audits in the South West against the following International standards;

  • Marine Stewardship Council Chain of Custody
  • Seafish Responsible Fishing Scheme
  • Seafish Technical Standard

Seafish, Seafood Cornwall & South West PESCA
Approved consultant for work on factory expansion, and NPD for South West.

  • Various projects completed

Consultant/Interim Technical Manager
Engaged by a producer of chilled and frozen fish (whole, fillet, H&G) and shellfish with 100 employees and a turnover of £16m supplying amongst others Morrisons ice counter together with numerous UK wholesalers and mainland European Retailers.

Key Achievements:

  • Responsible for pre-pack NPD for Morrisons.
  • Designed new factory extension & Packaging lines.
  • Developed BRC system, leading to accreditation by EFSIS, including implementation of metal detection systems.
  • Implemented systems to dispose of waste, following consultation with State Veterinary Service and Environment Agency. Significant savings, including legal appeal against SVS interpretation of EC directive.
  • Managed all technical issues associated with all customers, including launch into Tescos for chilled and frozen lines.

Technical Consultant
Engaged by a company supplying chilled and frozen crab, langoustine and lobster to UK and mainland European wholesalers.

Key Achievements:

  • Provided technical advice on new factory start up, NPD, and development of systems to lead to BRC accreditation.

Technical Consultant
Engaged by a company with 10 employees and £1m turnover supplying premium dairy ice cream and sorbet to local sales and national wholesalers including Spirit Group.

Key Achievements:

  • Developed systems leading to BRC accreditation.
    Advised on new factory build and specification for machinery.
